Valentines Chocolate Teff Cake

Moist Chocolate Cake

You may know me by now that I’ve been experimenting with teff flour and its beyond what I’ve expected. It works well with cakes, pizza crusts, falafels, bread, and so much more. This grain is super nutritious. My sister suffers from low iron and I’ve been using teff for her every week because I want to make sure she consumes more iron, but aside from that it also has loads of fiber, protein, and other vitamins. Another reason why I've been using a lot of teff is because I work with @teffco and they have been an amazing partner into my creativity in using teff grain and the flour.

Ingredients 

1 cup of @teffco teff flour
1 cup almond meal
2 flax "eggs"
1 1/2 cups coconut milk (canned)
1 tsp baking powder
2 tsp baking soda
1/2 tsp sea salt
1/3 cup coconut oil melted (for a moist cake it and it works without the oil) 
1/3 of a cup of raw cacao powder melted
2 tsp vanilla extract or paste
1/2 cup soaked pitted dates (about 6-7 large ones)
1/2 cup of agave syrup
20 drops of stevia extract (optional for more sweetness)

Instructions
Preheat oven to 360˚F.

Making flax eggs by combining 2 tbsp of flax meal and 5 tbsp of water. Let this sit for 10 min.  
Combine all dry ingredients in a bowl, recommend sieving them through a colander.  

Then add all wet ingredients into a high-speed blender, including flax egg and soaked dates. Blend until smooth and warm.

Add wet mixture to the bowl with dry ingredients, mix well with a whisk or fork. 
Line an 8-inch cake tin with parchment paper,  Pour cake batter in, even out the surface and bake for 40 mins.Take it out in 37 min for extra moist cake. Remove from tin and let cool for 15 min or longer. 

FROSTING

(optional) Once cool, slice cake horizontally and ice with chocolate ganache, but I didn't end up doing this for the photo. 

After it has cooled down, make sure it's not warm add whatever frosting you may want. For this recipe, I blended 2 cups of soaked cashews with 2 tbsp of water(or more if needed), 30 drops of stevia, and 1 cup of chopped strawberries. blend until completely smooth, just let this sit overnight but worth the extra effort. 

Top this cake with any kind of berries, frosting, and chocolate.
